Description
Saganaki “Arcadia” is a hard cheese produced from fresh pasteurized Sheep’s and Goat’s milk.
The name “Saganaki” originates from the frying pan in which it is prepared-fried, called a saganaki which is the diminutive of sagani a type of frying pan-skillet with two handles.
“Saganaki” cheese is eaten fried and served as an appetizer. Enjoy this delicious traditional Greek meze with a last minute squeeze of lemon and fresh crusted bread!
“Saganaki” recipe (time to prepare: about 10 minutes in total):
1. Cut the “Saganaki” cheese into rectangular slices of about 5 cm X 8 cm or round with a diameter of about 8-10 cm and about 1 cm thick.
2. Place the slices one by one under a cold water tap. Then coat lightly with flour and set aside until you have dredged all the slices.
3. Heat oil (vegetable or olive oil) in a heavy skillet and pan fry, turning the cheese slices once, until golden brown on both sides.
4. Remove and dab with paper towels and then serve immediately with a squeeze of lemon (serve with lemon wedges).
Tip: You can use milk instead of water for a richer, tastier result!
